Ingredients:
2 ripe bananas
4 eggs
¼ tsp baking powder
½ tsp vanilla bean powder
pinch salt
Topping:
coconut yogurt
fresh berries
Method:
Blend all the ingredients in a food processor.
Melt a teaspoon of coconut oil into a hot frypan.
Pour the mix in and fry until golden on each side.
Serve with a spoonful of coconut yogurt and fresh berries.
Option: If this recipe is too wet for you, add 1/2 cup of finely-blended oats to the mixture.
