THICK, LUSH, PINEAPPLE AND COCONUT SMOOTHIE BOWL
Ingredients
Soaked chia seeds in coconut milk (soaked the night before)
½ cup fresh coconut milk
2 tablespoons of yoghurt or kefir
1 cup of chopped frozen pineapple pieces
1 raw egg
1 tablespoon of collagen hydrosylate powder or 1 teaspoon of organic spirulina powder or power it up with all of them.
Optional: ¼ teaspoon of green leaf stevia powder for extra sweetness, ¼ teaspoon of vanilla bean powder, extra filtered or spring water or coconut milk to get it moving but keep it thick.
Method
- Blend all ingredients together until smooth.
- Serve in a bowl or large glass and a spoon.
- Sprinkle with cacao nibs and desiccated coconut for extra goodness and texture.
Note: you may use fresh almond milk if you don’t have coconut milk.
BANANA STRAWBERRY COCOA PANCAKES
Ingredients
1 banana, mashed ½ a cup of sliced strawberries
1 tablespoon of cocoa nibs, optional
¼ teaspoon of vanilla bean powder
¼ teaspoon of cinnamon powder
¼ teaspoon of stevia powder (optional)
2 eggs, beaten
2 tablespoons of coconut oil
Method
- Mix all ingredients together.
- Scoop out 2 tablespoons to make one pancake or pour all ingredients to make an extra large pancake.
