
Cereal and granola often get a bad rap for being high in sugar and low in nutritional value. But if you love the taste, the convenience and the crunch, this recipe has a lot going for it. It’s free from refined sugar, packs a protein punch with the quinoa flakes and contains beta-carotene from the goji berries.
Ingredients
½ cup quinoa flakes
¼ sultanas
¼ goji berries
¼ sunflower seeds
¼ sesame seeds
1 orange, juiced
½ tsp orange zest
Method
- Pre-heat the oven to 150C. Soak the goji berries in orange juice for 10 minutes.
- In a food processor, add all of the ingredients and blend to a coarse paste. Roll into individual balls and bake in the oven for 15 minutes. Allow to cool for 5 minutes and either serve on its own, or with yoghurt, milk and/or fresh fruit.
- Store leftovers in an airtight container and refrigerate.
